Strawberry Bocconcini Bites

If you’ve never tried balsamic vinegar glaze with fruit, you have got to try this salad. The sweet and sour combination is perfect for a refreshing snack. Bocconcini translates to “little bites” in Italian. They are semi-soft balls of mozzarella cheese, about the size of eggs. They can typically be found at the deli section of your local grocery store.

Total prep time: 15 minutes

Serves: 6-8


Ingredients:

  • Fresh strawberries

  • Mini cucumbers

  • Fresh basil

  • Mini bocconcini

  • Balsamic glaze (optional)

  • Mini skewers


Instructions

  1. Wash and prepare strawberries and cucumbers.

  2. Starting with a strawberry, then add a slice of cucumber, a folded piece of fresh basil, and end with a bocconcini.  Drizzle with balsamic glaze prior to serving, if desired.
