Maple Lemon Roasted Carrots Recipe

Recipe makes: 8 servings (1/2 cup per serving)

Cook time: 25 minutes

Rainbow carrots make this recipe visually stand out - and the better something looks, the more we want to eat it!

Ingredients

  • 1 ½ lb coloured carrots

  • ½ cup pure maple syrup 

  • ¼ cup olive oil 

  • ¼ cup apple cider vinegar 

  • Juice from ½ fresh lemon 

  • Zest from ½ lemon 

  • 1 tsp garlic powder (more to taste) 

  • Pinch of salt 

Instructions

  1. Preheat oven to 375 degrees F.

  2. Peel carrots and slice diagonally.   

  3. Mix together maple syrup, olive oil, apple cider vinegar, lemon juice, lemon rind, garlic powder, and salt.  

  4. Pour marinade over carrots and stir well. Set aside for 5-10 minutes to soak in the flavours.  

  5. Prepare a baking pan with parchment paper.  

  6. Spread carrots evenly over baking pan.  

  7. Pour a small of amount of the remaining marinade over carrots, if desired. Discard the rest. 

  8. Cook for 20-30 minutes until carrots are tender. 

Tip:

For extra flavour and for prep ease, marinade carrots in advance.
