This simple side dish is the perfect (and easiest) way to incorporate more greens into your day! Chances are, you have most of these veggies already in your fridge…or perhaps you weren’t sure what to do with them until now! What’s even better is that you’re getting some extra protein with the added eggs.
Yield: 3-4 servings
Prep time: 15 minutes
Cook time: 15 minutes
1 tbsp oil
3 medium zucchinis, chopped
1 small sweet onion, diced
1 red pepper, diced
1 green pepper, diced
1-2 cloves of garlic, minced
1 tbsp Italian seasoning
2 eggs, whisked
Heat 1 tbsp oil of choice in a large skillet over medium heat. When the oil starts to shimmer, that’s when you know it’s ready to use.
Add diced onion and sautee until translucent. Add minced garlic and cook until fragrant.
Toss in peppers and zucchini. Cook until tender.
Sprinkle veggies with Italian seasoning, and incorporate eggs until just cooked.
Serve right away with your favourite source of protein and a side of rice or quinoa.
