Grain bowls are on-trend right now. They also happen to be a great way to put together a balanced meal – one that incorporates complex carbs, healthy fats and plenty of protein. It’s nice to switch up the typical breakfast foods with this savoury dish. Plus, one-dish meals means less to clean up!
Yield: 1 serving
Prep time: 35 minutes
·¾ cup Cooked (leftover) quinoa – cooked according to package directions
1 egg (however you like it! We chose sunny side up)
cherry tomatoes, about 5-6, sliced
½ sliced avocado
Parsley to garnish
Salt and pepper to taste
Cook quinoa according to package directions. Start by layering quinoa on the bottom of a dinner bowl.
Next, layer on the cooked egg.
Top with sliced tomatoes and avocado.
Garnish with salt, pepper and parsley. Snap a picture if it looks nice!
