Crumbled feta and mandarin slices add a tangy flavour to this fresh salad. It’s perfect for late in the summer, but can be enjoyed year round!
Prep time: 5 minutes
Makes 6-8 servings
- ½ cup Crumbled feta
- 1 cup Mandarin oranges, peeled and diced
- 1 pint Fresh blueberries
- 1 cucumber, diced
- ½ bell pepper, diced
- ½ cup Sliced almonds
- Mixed greens
- If desired, toast almonds to bring out their flavour and crunch. Mix all ingredients together. To make a large salad, you can use a large container and layer the toppings (so base of greens, then add toppings, then another layer of greens, etc.).
- Toss with your favourite vinaigrette (check out some of ours!).
