Makes 2 Martinis
- 2 oz. Coconut Malibu Rum
- 2 oz. pomegranate seeds + juices from cutting the fruit
- 1 tbsp. freshly squeezed clementine juice
- ½ cup ice
- 4 oz. sparkling water
- Orange peel for garnish
Combine rum, pomegranate seeds and juices in a shaker over ice, shake 10 times. Pour sparkling water into a martini glass and top with shaker contents, excluding the ice.
*Note – do not put sparkling water into the shaker or it will explode! For more color, squeeze the juice from a few of the pomegranate seeds into the shaker before shaking.
