No-Bake Coconut Snowballs

Coconut snowballs are a wintery variation to the very popular energy bites. They are no-bake, easy to make, and taste great. You can swamp out the cashews for another nut and add or omit spices to your preference.

Ingredients:

  • 1 Cup Unsalted Cashews
  • 1 Cup Pitted Dates
  • 3 Tbsp. Pure Maple Syrup
  • 2 Tsp. Pure Vanilla Extract
  • 3/4 Cup Oats
  • 3/4 Cup Unsweetened Fine Shredded Coconut
  • 1/2 Tsp. Ground Cinnamon
  • 1 Cup Sweetened Shredded Coconut (for rolling)

Directions:

Place the cashews, dates, maple syrup, vanilla extract, and water into a food processor and puree until smooth. Transfer to a bowl and add oats, coconut, and cinnamon. Fold together until well combined. Refrigerate for 1 Hour. Take out of the refrigerator and roll into bit sized balls. Roll each ball into the sweetened coconut. Serve and enjoy!
