Have you ever tried avocado pudding? If you’re a fan of the creamy texture and rich flavour of a good chocolate pudding, you’re in for a real treat with this recipe. This recipe replaces traditional higher fat ingredients such as heavy cream and butter with heart-healthy avocado, without skipping on the ultra creamy and delicious texture that you crave in a pudding! Trust us, you won’t even know it’s made with avocado!
Yield: 4 portions
Prep time: 15 minutes
Cook time: chill in the fridge for at least an hour, over night is best.
2 large ripe avocados
½ cup of melted dark chocolate chips
¼ cup of brown sugar
2 tsp of vanilla extract
1/8 cup of coconut milk
1/8 tsp of salt
1 pint of raspberries to garnish
Place avocadoes in a food processor and process until smooth. Scrape down the sides if needed.
Melt ½ cup of dark chocolate chips in the microwave. Once melted and smooth, place the melted chocolate chips into the food processor on top of the avocadoes, along with the rest of the ingredients, except for the raspberries.
Process all the ingredients until the mixture resembles a smooth consistent pudding.
Place chocolate pudding into small serving dishes of your choice and place in the fridge to chill for at least an hour.
Once the pudding is chilled, distribute the raspberries among the 4 servings.
