Tasty Tofu Tacos

Looking to include more plant-based protein in your diet? These quick and easy tofu tacos will have you second-guessing that it’s even tofu! It’s packed with smokey Mexican flavours and a satisfying chew. Tofu is a great ingredient because of its versatility – it takes on the flavours of whatever you season it with and can really be made to your preferences. Tofu is lower in calories and saturated fats but contains similar amounts of protein compared to most meats. This will help keep you feeling full and satisfied for longer which helps you curb cravings and manage your weight. Enjoy!

Recipe makes 6-8 medium tacos.


Ingredients:

·       1 block firm or extra-firm tofu

·       2 tbsp olive oil

·       1 tsp chili powder

·       1 tsp ground cumin

·       1 tsp garlic powder

·       1 tsp onion powder

·       1 tsp dried oregano

·       ½ tsp salt

·       ½ tsp black pepper

·       1 package medium tortillas

Top with your favourite taco toppings (salsa, guacamole, sour cream, shredded cheese, lettuce, tomato, onion, cilantro)

Directions:

Wrap the tofu in a clean dish towel. Place a heavy object (cutting board, heavy pan) on top for at least 30 minutes to remove some of the moisture. This will help it get chewy and crispy.

Preheat the oven to 400°F. Cover a baking sheet with aluminum foil and coat with a thin layer of cooking spray.

Crumble the pressed tofu into ground meat-sized pieces. In a bowl, combine the tofu, olive oil, and seasonings. Mix until the tofu is evenly coated.

Spread the tofu onto the baking sheet in an even layer.

Bake for 15-20 minutes until crispy and dark in colour.

Scoop a spoonful of the baked tofu onto a tortilla. Top with your favourite taco toppings and enjoy!

Tip: Make a batch of taco seasoning for a quick meal by combining equal parts of the above seasonings and storing in an air-tight container in the pantry.
