Candied Pecan, Grapefruit & Feta Salad

Sweet, salty, tangy…your taste buds will be singing with this super simple salad! Grapefruit is known for its sourness. The most popular grapefruit that we see in Canada is the Ruby Red grapefruit, which are in season from November to April.

Ingredients

  • 2 red grapefruits

  • 1 head romaine lettuce

  • 2 cups baby spinach

  • 1 cup feta cheese, crumbled

  • 1/2 cup candied pecan pieces

Fresh Grapefruit Vinaigrette:

  • Juice reserved from grapefruits

  • 2 tbsp honey

  • 1/4 cup olive or canola oil

Instructions

  1. Peel and section grapefruit. Reserve juice and set aside.

  2. In a large bowl, place lettuce and spinach. Top with grapefruit sections, feta cheese, and pecan pieces.

  3. Pepare vinaigrette by whisking together reserved juice, honey, and oil. Add salt & pepper to taste. Pour evenly over salad and toss thoroughly right before serving.
