Roasted Red Pepper Hummus Sandwich

Need a quick lunch to bring to work? Look no further than this simple yet delicious sammy!

Prep time: 5 minutes

Makes 1 sandwich

Ingredients

  • 2 slices - Whole grain bread
  • 2 tbsp - Roasted red pepper hummus
  • 2 slices - Swiss cheese
  • Green leaf lettuce
  • Tomato slices

 

Instructions

  1. Build your own sandwich! Spread hummus on each side of whole grain bread.
  2. Top with sliced cheese, lettuce and tomatoes.
  3. Enjoy!
