Blueberry Feta Salad

Crumbled feta and mandarin slices add a tangy flavour to this fresh salad. It’s perfect for late in the summer, but can be enjoyed year round!

Prep time: 5 minutes

Makes 6-8 servings

Ingredients

  • ½ cup Crumbled feta
  • 1 cup Mandarin oranges, peeled and diced
  • 1 pint Fresh blueberries
  • 1 cucumber, diced
  • ½ bell pepper, diced
  • ½ cup Sliced almonds
  • Mixed greens

 

Instructions

  1. If desired, toast almonds to bring out their flavour and crunch. Mix all ingredients together. To make a large salad, you can use a large container and layer the toppings (so base of greens, then add toppings, then another layer of greens, etc.).
  2. Toss with your favourite vinaigrette (check out some of ours!).
